Just Call Me Rachel Ray

I've been in a cooking mood the past week or so and I've actually been making things from cookbooks (gasp)! I typically make really easy things that don't call for a recipe. Sometimes that results in some fairly good dishes and sometimes it does not. I made this salad the other night and was quite proud of myself. It came from this cookbook:
